TASTING NOTES: Initially all mineral with a flinty citrus nose then opens up to reveal roasted nuts and freshly risen bread. Palate is laser sharp on entry then pumps up and fills out with fresh red strawberry and lime. Acids are fresh but not overpowering. Aged in used Sauternes barrels to soften it up.

The Sparkling wine is made in the traditional method (same as for the champagne) with a first fermentation in stainless steel vat and a second fermentation in bottle.
