With the Pra di Bosso line, they have sought to elevate the category through low yields and a meticulous balance of silky tannins and acidity.
 
TASTING NOTES: Ripe cherry, raspberry, and red currant, with hints of fresh herbs and violets on the nose, while the palate is of ripe red berries and compote with a through-line of fresh herbs.

Organically farmed 30 year/old vines on deep clayey hillsides just south of Modena. Long temperature controlled maceration. Indigenous yeast fermentation at low temperature in tank, no additives. Second fermentation in bottle, degorged ‘a la volé’. No added sulphites.
 
TASTING NOTES: Light and refreshing with aromas of red berries and violets, followed by flavors of fresh strawberries, red cherries and a satisfying bitter almond twist on the finish.
 
FOOD PAIRINGS: Earthy and relatively deep-flavoured unsulphured Lambrusco, a festively sparkling accompaniment to salami, big roasts and barbecue.

Cantina Settecani was founded in 1923 form 40 farmers. It produces the traditional wines of the area, first of all Lambrusco Grasparossa with its unique character, fruitiness, sparkles and freshness. Cantina Settecani went viral world wide from CNN to China in March 2020 as the neighbors of the winery found Lamrbrusco wine flowing down the tap of their houses. Fortunately the fault did not create harm, it was actually appreciated.

TASTING NOTES: Interesting red sparkling Italian wine. Red and dark fruit, sweet cherry, hard candy. Sweet aftertaste.
 
FOOD PAIRINGS:  It's recommended with tasty first and second courses. It also pairs amazingly with cheesecake, especially fruity cheesecake.
