Omen is produced by Atlas Wine Co., a newer winery that emphasizes minimal intervention, additive-free winemaking, and sourcing from “hidden gem” AVA vineyards. Their Chardonnay is harvested quickly (within 8 hours), pressed using a Champagne-style press, aged for 9 months with 30% new oak, and lees stirred twice a month.

 

TASTING NOTES On the nose: baked peach, apple, yellow plum, potpourri, and toasted oak. On the palate: apricot, pineapple, lemon cream, clove and mineral notes, with Tahitian vanilla. The finish is rich and supple. 

 

FOOD PAIRINGS: Pairs well with shellfish, grilled or roasted poultry, creamy pasta dishes, and mild goat cheeses.
