Mtsvane Estate is a boutique producer in Imereti, Georgia, focusing on sparkling natural wines made in the pet-nat style. The Tsolikouri–Tsitska 2023 bottling is hand-harvested at around 245–500 m elevation from humus-rich calcareous soils with quartz-mica schist. It spends seven months on lees in bottle before disgorgement—delivering focused complexity and expressive texture. 

 

TASTING NOTES: Pale straw in color with a gentle mousse. Aromas of white flowers, green apple, and citrus zest open the nose. The palate is crisp, energetic, and fully dry—featuring saline accents and silky spice, with a long, tactile finish that unfolds slowly.

 

FOOD PAIRINGS: Pairs beautifully with shellfish, oysters, sushi, ceviche, and any dishes featuring white sauces or fresh herbs.
