Weingut Selbach-Oster, a historic Mosel estate dating to the 1600s, farms steep, slate-rich vineyards in Zeltingen—including the renowned Schlossberg site. The Auslese bottlings are crafted from late-harvested clusters, including botrytis-affected fruit, fermented with indigenous yeasts in traditional 1,000 L fuder barrels or stainless steel for purity and texture. 

 

TASTING NOTES: The 2022 Schlossberg Riesling Auslese offers intense aromas of flinty slate, iodine, and lemon balm. On the palate, it’s lush yet precise—showcasing candied Mirabelle plum, white peach, and citrus peel, framed by vibrant salinity and a savory lemon-bitter finish.

 

FOOD PAIRINGS: Perfect with spicy Asian dishes, foie gras, duck liver pâté, or fruit-forward desserts like apple strudel. It also pairs beautifully with blue cheese and aged soft-rind cheeses
