Unico Zelo is a family-run winery founded by Brendan and Laura Carter, focused on crafting vibrant, Mediterranean-style wines in Australia. Their “Jade & Jasper” Fiano (2023) is sourced from dry‑grown vines planted in ancient sandy‑limestone soils. It’s wild‑fermented, undergoes a brief 24‑hour skin contact, and sees no oak—fermented and aged entirely in stainless steel—highlighting freshness and textural purity.

 

TASTING NOTES: Pale straw with green highlights. Aromas of jasmine, white peach blossom, apple blossom, and lemon-lime zest emerge from the glass, supported by saline minerality and wet stone. The palate is crisp and lively, offering pear, honeydew melon, grapefruit, almond skin, and a gentle, waxy texture. A crackling acidity and persistent saline finish make it both refreshing and food‑friendly.
