Colonia Las Liebres is a Bonarda-focused project spun off from Altos Las Hormigas in the early 2000s. Its name—"Colony of Hares"—evokes the lively, terroir-driven character of Argentina’s second-most planted red variety. The wine is made from pergola-trained vines at ~800 m elevation in sandy-clay soils. Fermented in stainless steel over about 10 days with daily rack-and-return, followed by aging in raw concrete to preserve freshness and purity.
TASTING NOTES: Deep ruby with blackish tones. The nose offers plum, black cherry, rose petal, violet, licorice, black pepper, and a slight herbaceous (minty) note. On the palate it’s plush yet agile, with raspberry, dark bramble fruit, spice, and firm—but airy—powdery tannins, finishing with savory bite and lingering dark chocolate notes.
FOOD PAIRINGS: Offers excellent pairing with grilled meats, stews, charcuterie, veal, pork, and game—especially steak with chimichurri or tomato-herb sauces.
