The vinification begins with a destem. Two-thirds of the juice is collected by direct pressing and one-third undergoes skin maceration for 48 to 72 hours. The fermentation is carried out with native yeasts in 225-litre barrels (5% new) and in tons of 1,200 to 2,500 litres. The wine is then aged on its lees for 6 months.
TASTING NOTES: Intense yellow wine. Intense nose with white fruit, spice, aniseed, nuts. Balanced fine acidity, medium body, fruity and spicy, long finale.
