Winemaking begins with foot‑stomping Valdiguié on skins for up to 24 hours, while Zinfandel undergoes carbonic maceration. Most grapes are gently pressed into stainless steel, with Grenache fermented in concrete. Native-yeast fermentation yields a dry wine aged 4 months on lees before a small dose of sulfites at bottling.
