The 2024 Ovum PNK Salt is a distinctive rosé crafted by winemakers John House and Ksenija Kostic House. Sourced from a certified organic vineyard established in 1983 in Oregon's Columbia Gorge AVA, the own-rooted Cabernet Sauvignon vines thrive in loess and ancient volcanic ash soils. The wine undergoes native yeast fermentation, initiated with a small addition of Big Salt, and completes full malolactic fermentation. It is bottled without fining or filtration, with only minimal sulfur added.
TASTING NOTES: PNK Salt offers an aromatic profile of ripe cherries, green fig, currants, and geranium. Despite minimal skin contact, it presents characteristics reminiscent of red wine. The palate is marked by bracing acidity and a long, saline finish, with flavors akin to cherry Jolly Rancher.
FOOD PAIRINGS: This rosé pairs well with grilled seafood, fresh salads, and soft cheeses. Its vibrant acidity and mineral backbone complement a variety of dishes.
