From The Winemakers: "We love Chinon & the wines of France's Loire Valley. We strive to produce old world cabernet franc inspired by the wines from this region. This wine was fermented destemmed, with pigeage and no punchdown tools or pumps. It only recieved less than 30 ppm sulfur after the secondary fermentation was complete and was bottled unfined and unfiltered. This wine was aged in one puncheon and 1 barrique."

 

TASTING NOTES:  It is scented with fresh herbs, black tea and violets, and tapenade. It is medium - full bodied and has a lovely balance of fruit and acidity. 

 

FOOD PAIRINGS: light dishes like shellfish pasta, chicken Kiev, and creamy cheeses.
