The base wine for this sweet vermouth is a blend of organically and conventionally farmed aromatic white varietals, including Gewurztraminer, Muscat, Riesling and Pinot Gris. To this base Ransom adds the brandy, alambically distilled in house and barrel aged in mixed French oak. The Vermouth is then infused with a tantalizing blend of aromatic botanicals.
TASTING NOTES: Pleasing and complex. Wormwood has a nice presence here. Similar to the nose, with a bit more of the dried fruit notes. There are far too many botanical in here for me to pick anything out easily. The spice is there, the astringency is there, and the citrus is there.
FOOD PAIRINGS: These are the crisp wines of the vermouth world with an extra herby edge. Served on the rocks they’re a natural match for seafood especially shellfish like oysters, crab and prawns. Chefs often add a dash when they’re cooking scallops or clams for example or making a seafood risotto – you could drink the same vermouth with the dish.
