The best white grapes are collected and left to dry in well-aerated rooms according to the ancient Tuscan tradition until mid-January when the sugar-rich clusters are pressed. The must is left to ferment in characteristic wooden casks, after having been sealed air-tight, for at least 5 years.

TASTING NOTES: Good freshness on the nose with perceptible notes of fruit and flowers. On the palate, the wine is pleasurable and versatile, soft in its tannins and ripe.

FOOD PAIRINGS: An excellent match with dry pastry or aged cheese accompanied by honey or jam or marmalade. It is also a superior wine for meditation or for moments of relaxation.
