The harvest is done in mid-September, the grapes are softly pressed, the must is taken at low temperatures and the maceration is done with a low controlled temperature, for better extraction of aromas. Charmat method for the second fermentation, for 40 days.

TASTING NOTES: This Extra Dry prosecco is 100% Glera grapes, and contrary to popular belief, is a touch sweeter than the Brut counterparts (just a touch, don't worry!). Mille has a beautiful aromatic nose, with some nice honey and stone fruit notes on the palate. The acidity in the wine provides the freshness you want while the velvety bubbles provide a nice soft finish.

 

FOOD PAIRINGS: Great on its own, or paired with a light fish meal!
