For 6 generations, the Hasselbach family has been convinced of the uniqueness and quality of their vineyards. They give the wines made from them the maximum freedom and the time they need to become ambassadors of their origins. In concrete terms, this means that additives are largely avoided in winemaking. To achieve this, we rely on a long mash time, gentle aging in wooden barrels and stainless steel tanks, a long yeast storage period and a lot of patience.
TASTING NOTES: Aromas of juicy peach, pear, raspberry and lime with a sprinkling of dried herbs. On the palate one finds grapefruit, tangerine, lime and white pepper. The wine is well-proportioned with a long minerally texture finishing with lime and almond paste.
FOOD PAIRINGS: Pair with rich, fatty fish with a sweet/spicy preparation, sushi, spicy Asian cuisine, grilled/roasted meats with an herbal/savory/sweet preparation.
