A benchmark English sparkling wine that beautifully showcases the chalky terroir of the South Downs. The estate’s vines thrive in flint-strewn soils over a chalk base—conditions reminiscent of Champagne’s Côte des Blancs—encouraging the Chardonnay grapes to fully express their elegant minerality and bright acidity. Hand-harvested fruit is whole-bunch pressed, with fermentation in stainless steel and eight months of lees contact before bottling. A portion of reserve wine (20–30%) adds depth and consistency, while three to four years of bottle aging brings nuance and complexity.
TASTING NOTES: Delightfully fresh with vibrant acidity and impeccable balance. Crisp green apple, white blossom, grapefruit, and lemon zest mingle with subtle notes of kumquat, flinty minerality, and a hint of patisserie softness. Finishes clean, chalky, and refreshing.
