The special location of the Temperance Hill Vineyard inspired this wine whose grapes were picked in two separate passes, about two weeks apart. The first pass allows for great acidity and structure, while the second pass adds concentrated ripe fruit and richness. Fermented and aged in old Burgundy barrels, on the lees without battonage.

 

TASTING NOTES: The rich tropical fruit and spices on the nose are tamed by the acidity and structure making these medium bodied and with a golden color. 

 

FOOD PAIRINGS: Pair with cod in spiced coconut milk.
